No-Bake desserts are like my best friend! I do bake occasionally but not very often because I find that things rarely turn out as I planned them too. Maybe someday I’ll conquer the whole baking thing but that day is NOT today! Besides no-bake desserts are way simpler. 😉
These No-Bake Vegan Dark Chocolate Coconut Peppermint Balls are totally on point! If you love coconut or the mounds candy then this is definitely for you!
Plus nothing is better than having healthy candy on hand in the freezer for when you totally need a chocolate fix! Am I right?!
I love to freeze candy, when you freeze chocolate it just lasts longer when you eat it, it has to melt in your mouth and all that. 😉
These No-Bake Vegan Dark Chocolate Coconut Peppermint Balls are my most recent obsession because I was totally one of those who liked the mounds candy so I had to make myself a vegan substitute for those and it had to be healthier.
When you take them out of the freezer you let them sit for about 10 minutes (unless you store them in the fridge) and they have the perfect non-soggy chewy coconut texture with a hint of peppermint and coated in chocolate I mean doesn’t that just sound dreamy?!

Something about coconut always makes me think of the beach, I’m not sure why but we (those of us freezing right now) can eat these and pretend we have our feet in the sand listening to the ocean waves… do I have a problem? I feel like I talk about the beach a lot… I really think I am meant to live there one day! I’m a total beach bum at heart the whole ripped shorts, white tank and flip flops is perfection! … ok now that I painted a dreamy picture for myself and hopefully you too let’s get to talking about this yummy-ness! 😉

No-Bake Vegan Dark Chocolate Coconut Peppermint Balls
- Prep Time: 15 mins
- Cook Time: 60 mins
- Total Time: 1 hour 15 mins
- Yield: 12 1x

Ingredients
- 2 cups unsweetened shredded coconut
- 3 TBSP melted coconut oil
- 3 TBSP maple syrup
- ½ tsp peppermint extract
- Coating:
- ¾ cup vegan chocolate chips or dark chocolate bar
- ½ tsp coconut oil
Instructions
- In a large mixing bowl add your shredded coconut, coconut oil, maple syrup, peppermint extract and mix well.
- Line a cookie sheet with parchment or wax paper and form balls with your coconut mixture. (see notes)
- Place the balls on the lined cookie sheet and place in freezer for 30 minutes.
- Before removing them from the freezer melt your chocolate and coconut oil together, remove them from the freezer and use a spoon to dip each coconut ball and tap on the side of the bowl to tap off the excess chocolate.
- Freeze again for 30 minutes and then store in fridge or freezer. Fridge up to 1 week freezer up to 1 month.
- Optional CHOCOLATE LOVERS:
- You can add one more step of melting more chocolate and dipping a second time if you want an extra thick chocolate layer. 😉 Just a thought!

Notes
Forming the balls can be tricky it may seem too dry but trust me it’s not, use one hand and form the balls by squeezing in one hand and rotating in hand until it forms a balls, if you use both hands it will continue to crumble so just keep trying by using one hand a squeezing/packing it together.
