These Oil Free Baked Curry Spiced Potatoes are SUPER SIMPLE to make! Only 6 ingredients, also fat free! Vegan plus Gluten Free.

I LOVE how easy these curry spiced potatoes are and I think you are going to LOVE them too!
Nothing is better than some good ol’ comfort food like potatoes when it’s a super happy but also sad month!
For those of you who have been around for a while you have already heard this but August is the month my kitty died and where the heck does the time go?! It was 4 years on Wednesday! And next month will be 2 years since my other kitty passed away! :-/ it seems like just yesterday, funny how life works like that hu?
But the happy part of this month is my boys (kooper and Kush) turn 4 years old on Sunday!!! Again can’t believe it’s already been that long! We have only had Kooper for 3 ½ years because he was 5 months old when we got him and Kush we have only had for 3 years but STILL!
Is this how it is with children? I mean I totally understand when people say they grow up fast! My puppies are like big boys now! HA!!! 😉
And one last thing, my birthday is the last day of this month… I’m not sure how I feel about that… you know when you are a little kid you always get excited for your birthday but when you get older, well… you kind of don’t want to be reminded of your age! I mean I’m only going to be 28 but again with time going so fast I feel like it was just yesterday I got my license! … I guess I have decided I stopped aging at 26 that sounds good to me! 😉 young forever!!! Who’s with me???
Anyways enough about me and the month of August! Let’s talk about these Oil Free Baked Curry Spiced Potatoes!!!
They are SO simple literally chop up some yellow skin potatoes and make a yummy curry spice mix!
Toss them in a bowl, sprinkle and flip around the potatoes until they are well coated in the mixture and pop em’ in the oven stirring every 10 minutes so they don’t stick! That’s it!
A couple things I want to caution about these spices though…
They stain your fingers and your baking dish!
So make sure you use a spoon or wash your hands with soap immediately after coating them in the spice mixture!
And also make sure to use a dark pan or line a baking dish so you don’t stain a white baking dish or something awful like that!

Oil Free Baked Curry Spiced Potatoes
- Prep Time: 5 mins
- Cook Time: 45 mins
- Total Time: 50 mins
- Yield: 1-2
Ingredients
- - 6-9 small yellow potatoes (cut into small cubes)
- SEASONING:
- - ½ teaspoon curry powder
- - ½ teaspoon turmeric powder
- - ¼ teaspoon garlic powder
- - ¼ teaspoon paprika
- - ¼ teaspoon cayenne powder
Instructions
- Pre-heat the oven to 375 degrees F and get a baking sheet or pan to bake the potatoes in.
- Rinse and chop the potatoes.
- In a small bowl add all the spices and stir them up so they are well combined.
- Either add the potatoes into a bowl or directly into the baking dish, sprinkle the spice mixture over the top and use your hands or a spoon to toss the potatoes around in the mixture so they are all evenly coated. (see notes)
- Place in the oven and bake for 45 minutes using a spoon to carefully flip them around every 10 minutes so they don’t stick to the pan.
Notes
This seasoning mix has a tendency to turn your fingers yellow if you use your hands to mix up the mixture, I used my hands and washed immediately with soap but you can also use a spoon of put plastic baggies on your hands.
I also used a dark baking dish because these spices will turn a white or light colored dish yellow and it will be very hard to get it off! So use a dark baking dish or line it with parchment paper if you would like.
