I love less dishes to wash donβt you?! For this One Pot Quinoa Veggie Soup itβs exactly what it says ONE POT to make it, obviously you will have more dishes because you arenβt going to eat right from the pot HA! but only a couple more. π
I think you are really going to like the simplicity and spicy flavor of this filling soup!
I know I know! you are probably thinking I am crazy right about now, like soup? it's summer! Β well...
I know itβs not winter right now and I am bringing you a soup recipe, but I swear Iβm just always opposite of everyone! It's like a little thing in my brain that always convinces me to ... rebel from the normal or something!
All winter goes by and I have no appetite for soup, I think I only made it once... and then summer comes and Iβm all for soup! Go figure!
But itβs not like I could waitttt until winter to show you how easy this is because quite honestlyβ¦ who says soup is only for winter?... if you say it is, then book mark this for later π but in my opinion, a nice sunset sitting outside when it starts to get chilly would be perfect to have some soup right?!
so are ya' with me on this? let's live on the edge and eat warm soup in the summer... I mean people have warm coffee all year round so why not soup?
Ok, so basically you cook the quinoa and if you have been around this blog long enough then you totally know how to cook quinoa I mean I use it A LOT! π itβs easy and healthy what can I say?
If you donβt like quinoa then you can totally swap it out for rice!
So after the quinoa is cooked and in the pot, add the veggies and vegetable broth cook until it is warm, add the cayenne (and whatever other spice you would like I mean there are not rules here) π and cook another 1-2 minutes and thatβs it! Done!
Serve in bowls and top with some ripe smashed up avocado and a slice of lemon! I really do highly recommend the avocado on top it might seem like a strange combo but trust me it is delish!
TIP: If you are taking this as a lunch for work you may want to smash the avocado in a separate container and add a small amount of lemon or lime juice to it to help prevent the browning of the avocado! Then heat the soup up at work and add the avocado after!

One Pot Quinoa Veggie Soup! This is SO easy to make, takes about 30 minutes or less and great for lunch or dinner! It is slightly spicy and completely filling! Vegan and gluten free!
- Prep Time: 5 mins
- Cook Time: 30 mins
- Total Time: 35 mins

Ingredients
- - 1 cup dry quinoa (rinsed and drained)
- - 1 Β½ - 2 cups low sodium vegetable broth
- - 2 cups mixed frozen veggies (mine have peas, carrots, corn and green beans) ot whatever veggies you like!
- - Β½ teaspoon cayenne pepper
- - 1 ripe mashed avocado for topping and slices of lemon.
Instructions
- In a pot add the rinsed quinoa and water according to instructions on your package mine called for 2 cups but read the back of your package!
- Once the quinoa is cooked (about 15-20 minutes) and all the liquid is absorbed add the veggies and veggie broth⦠mix and cook on medium heat for about 5 minutes with lid on ⦠then add the cayenne pepper and cook another minute!
- Serve in bowls, top with ripe avocado (it must be ripe in order to smash it up like pictures) and a slice of lemon to squeeze over the top!
- Make 2-3 large bowls of soup!
Notes
NOTE: the amount of vegetable broth you use is personal preference, I used about 1 Β½ cups but if you like a lot of liquid you may add more!
If you have leftoverβs to refrigerate just keep in mind that the quinoa will continue to absorb liquid so if there isnβt a lot of vegetable broth liquid added you may need to add more the next day when you go to re-heat it, or just eat it as seasoned veggie quinoa instead of soup!
If you do not like quinoa you can totally swap it out for rice!

I like your idea of having a bowl of soup while the sun sets outside. I don't have a problem with soup in the summer. I'm the woman who gets ice cream cravings in January. π This looks so healthy and vibrant. Can't wait to try it!
