I cannot believe it's already December! I absolutely LOVE this time of year as far as the colors and the spirit everywhere! ... The cold that's a wholeee different story HA...
And as I type that I totally get that I’m giving you a cold recipe! 😉 But in my defense, I eat cold nice creams and smoothies all year, I just happen to always eat them in front of a heater!
Anyways some of you that have been around for a while already know I love my nice cream and smoothies! Actually I just love all fruit in general 😉
I thought I would make a peanut butter and jelly flavored nice cream bowl, which by the way, nice cream comes in all different forms depending on how thick you make the nice cream part (see my raspberry nice cream)
Anyways it's really healthy for you and couldn't be much easier to make as long as you have a good food processor or high speed blender!
And I know your probably thinking hey lady! I'm eating all the cookies right now it's still December!!! I'll start eating healthy in January! Well that's why I'm going outside the box and preparing you so you have a few ideas of  some yummy and healthy recipes so you don't have to wait for them in January! But anyways, the combo of PB&J topped with this rawnola and coconut flakes is out-of-this-world!!! it's super cold and creamy just like ice cream and the rawnola gives it texture and chewy-ness, the coconut flakes... well they are just tasty! period.  😉

PB&J Nice Cream with Rawnola
PB&J Nice Cream with Rawnola is extremely quick and easy to make, very healthy, vegan and gluten free! Doubles as breakfast or dessert!
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Yield: 1 1x
Ingredients
- For the PB nice cream part:
- 3 frozen bananas
- 2 tbsp unsweetened vanilla almond milk (I like SILK brand)
- 1 tbsp all natural PB
- For the "jelly" raspberry swirl:
- ½ - ⅔ cup frozen raspberries
- 1-2 tablespoon water
- Topping:
- Rawnola and coconut flakes
Instructions
- Add all your nice cream ingredients into a food processor (bananas, almond milk and PB) blend until creamy smooth, you may need to pulse it and scrub the sides down a couple times to get it going, if you need to add 1 more tablespoon of almond milk that's ok but it won't be as thick it will end up more runny with the more liquid you add so try to just keep blending until you see it start to get creamy!
- Pour the nice cream into a bowl and add you raspberries and water to the food processor and blend until jelly like consistency (rinse the food processor prior to making the jelly if necessary)
- Top with rawnola and coconut flakes!
- Notes: I used a mini food processor (the ninja) so if your using a regular large food processor the jelly may be hard to get going, if that's the case just make more jelly by just adding more raspberries and a little more water!
- High power blenders also work well!
