    Pumpkin Spice Ice Cream Cookie Sandwich is a favorite child hood treat made vegan! 😉 ohhh yesss you want these!!! VEGAN

    Happy Almost Halloween!!! I love the colors outside, and our lights outside give me such a big smile! I love the orange colors this time of year! ... anyways,

    I told you about my obsession with these cookies! And my ice cream in the freezer! This is the last usage of these cookies! 🙁 but it's ok there's lots more cookies in the universe to experiment with, and with Christmas (if you celebrate that, or what ever your holiday is 😉 ) being right around the corner I smell lots more chocolate coming! Oh the possibilities!

    So about this Pumpkin Spice Ice Cream Cookie Sandwich, it's SUPER simple and of course you could use any cookie for these ice cream sandwiches but they won't tastes like fall, mixed all up with ice cream, doing a happy dance in your mouth!

    I used to LOVE ice cream sandwiches growing up and since cutting dairy I haven't had one until now! And let me tell you, this one is HUGE! You can totally eat the whole thing, but we split it becauseeee well honestly there's more holiday baking coming up and we just decided be be grown ups about it! :-/

    So make these cookies! ... And eat a couple! 😉
    Then make this!!!
    And then use the last two and make this Pumpkin Spice Ice Cream Sandwich !

    Pumpkin Spice Ice Cream Cookie Sandwich

    Ingredients

    Scale
    • 2 of these cookies
    • ⅓ cup of vegan chocolate chips melted (I use Enjoy Life brand)
    • 1 tbsp of extra chocolate chips to put around the edges
    • ½ cup of vegan vanilla ice cream (I used So Delicious brand in the vanilla almond milk flavor)

    Instructions

    1. In a small bowl melt your chocolate chips
    2. Spread if over half of the top cookie (both bookies is optional I only did the top one)
    3. Let the cookie sit for about 1 hr so the chocolate can firm up or place in freezer for 10 minutes to speed up the process but the cookie will have a chewy texture after being in the freezer, not bad of your in a hurry but letting it sit out is better)
    4. Scoop out you ½ cup of ice cream and I just used my hands while the ice cream was freezing right out of the freezer to form a cookie shape and set it on the bottom cookie and used the back of a spatula to push it flatter (I'm sure there is a better way but that's what I did)
    5. Place the top cookie on and then place the extra chocolate chips around the edges (I put them in the palm of my hand and just rolled the cookie edges in my hand)
    6. Enjoy right a way!
    7. Makes 1 ice cream sandwich but could be enough for two because it's huge!
    8. THE TIME ESTIMATE IS BASED ON THE COOKIES ALREADY BEING MADE!
