Rudolph’s Chewy Sprinkle Cookies are a reindeer’s favorite gooey chewy cookie and a nice sweet homemade vegan cookie for Santa’s best furry friends!
With all that hard work, Santa’s furry friends need a sweet treat on Christmas also right?!
Nothing better than a gooey and chewy cookie with little crunches of sprinkle through out with a traditional vanilla almost cake batter flavor!
I know Rudolph and his friends will love them… and I’m sure you will too!
So to make these Chewy Sprinkle Cookies it’s quite simple, you only need 1 bowl.
First you melt the butter and then mix in the sugars until nice and well combined, then add in the rest of the wet ingredient’s until it’s sugary sweet smelling and all mixed up!
Next add in the flour, salt and baking soda all at once, and then mix it up, add in the sprinkles and mix until well combined.
The amount of sprinkles you add really is a personal choice, I used about 2 tablespoon but depending on you desire of crunch you can add more or less, or you can just roll the dough into plain cookie balls and just roll the balls in a small bowl of sprinkles.
Doing it this way will make it so there is less sprinkles in the cookie but also make a pretty sprinkles appearance on the outside of the cookie instead of it mixing into the cookie without seeing very many of them… again whichever way you prefer is perfect!
I like to place the dough in the fridge for 1 hour before rolling into balls OR roll into balls and freeze for 15 minutes before baking, this ensures the the cookies don’t spread into a flat wafer when baking… if you forget to chill the dough don’t worry… once they start to spread pull them out and use a spoon to gently re-shape them, re-peat as needed!

Ingredients
WET INGREDIENTS:
- ⅓ cup soft room temp butter
- ⅓ cup vegan cane sugar
- ⅔ cup packed brown sugar
- ⅓ cup non-dairy milk // I use SILK unsweetened almond
- 1 ½ tsp vanilla
DRY INGREDIENTS:
- 1 ½ cup all purpose flour
- Pinch of sea salt
- ½ tsp baking soda
- 2 TBSP Sprinkles // I used a vegan blend from Fancy Sprinkles
Instructions
Pre-heat the oven to 360˚ F Line cookie sheets with parchment paper 1. In a large mixing bowl add the butter first, let get warm if you haven’t already, about 20-30 minutes if necessary. 2. Mash the softened butter and the sugar together first and then add in the milk and vanilla and mix well. 3. Add the dry ingredients to the wet and mix well. 4. Gently stir in the sprinkles. I used 2 tablespoon but you can use more or less depending on how many crunchy sprinkles you like in your cookies! 5. Roll into balls and place on cookie sheet, place in freezer for 15 minutes before putting in the oven OR before rolling balls pale dough in the fridge for 1 hour before rolling into balls. 6. Roll the balls in some more sprinkles so they show on the top the cookie more… this is optional.
Notes
Let cool completely before removing from lined baking sheet! Store in a sealed container or covered tightly with plastic wrap for up to 1 week
