So, I'm listening to really old phone music on my phone while writing this post... it's funny when you listen to older music from your past, you wonder what happened to a lot of the artists... half of them either don't make music anymore or they have changed SO much that they are unrecognizable! lol but at least there are still some oldies that are still out there stayin true to their roots .... oh my gosh I can say "oldies" that made me feel... not-so-young HA!

I'm ALL about easy to make desserts especially freezer ones! I just love them because they last longer and you can nibble on them all week long!
these Salted Chocolate Almond Drops are stored in the freezer, which is great because freezing chocolate makes it last longer in your mouth! and then you eat less! its perfect portion control! 😉

Salted Chocolate Almond Drops -Vegan -GF -Soy Free
Salted Chocolate Almond Drops -Vegan -GF -Soy Free
- Prep Time: 5 mins
- Cook Time: 1 hour
- Total Time: 1 hour 5 mins
- Yield: 2 cups 1x

Ingredients
- ¾ cup almonds (I used raw)
- 1 cup enjoy life chocolate chunks
- 2 Tbsp unsweetened vanilla almond milk
- 1 tsp vanilla
- sea salt
Instructions
- first start by putting your almonds in a food processor and pulsing until broken up into tiny chunks (don't process too long or you'll have a chunky almond butter texture, just pulse 5-10 times)
- into a medium mixing bowl pour your almonds and set aside
- add your almond milk and vanilla to a medium pan on medium heat and let sit about 30 seconds
- add you chocolate chunks and stir continuously until smooth (if you don't keep stirring it will burn quickly so do not stop stirring) about 2 minutes
- pour the chocolate over the almonds and mix!
- add the mixture to either a piping bag (I get them from Michael's) or into a large zip lock bag and snip a good amount off the end so the almonds chunks will come out
- line a cookie sheet (or two) with parchment or wax paper and pipe little drops onto the sheet
- sprinkle sea salt on top and place in freezer until firm!
- keep stored in the freezer up to 2 weeks

oh I love those too! but havn't had them in SOOO long since trying to go mostly vegan! you could totally throw some coconut shreds in this recipe too 😉 that would be de-lish! might need a little extra chocolate though if you add the coconut! and YES you could definitely swap the almond milk for the coconut milk it's a different flavor but would still taste de-lish 😉 thanks so much! 😉
