oh yeahhh it's FUNFETTI Cupcake time!!!!
My mom's birthday is today so HAPPY BIRTHDAY to her!
I made these cupcakes yesterday for her birthday 😉
while I wait for Nick to get home I'm sitting here and writing this post and checking in on my girls in my accountability group 😉 life is SO sweet right now!
tomorrow I plan to spend a bunch of quality time with mama celebrating her birthday and her life... IÂ am so great full for the freedom I have in my life!
anywaysss... YES I woke up today Tuesday March 3rd to about 7 more inches of SNOW! hey yo' SUMMER, you can decide to show up any time now!
plus I have been fighting a nasty cold that I have had for over a week! any tips to make it go away faster?!?!?!
Oh well... perfect day to make these lovely colorful  (I love colorful food) cupcakes!
and I'm gonna be totally honest with ya'll... I like to put coconut ice cream on top my cake and cupcakes! you know what I did...?
I put my cupcake in a bowl, smashed it up a little and topped it with coconut ice cream!!! and guess what, it was AH-Mazing!!!
of course these are absolutely delicious by themselves but I guess I felt like going overboard a little! p.s. mom thought it was pretty amazing too! hehehe
the center of these with the GF flour is crumbly but moist at the same time (regular flour is less crumbly)
the frosting is SO rich and creamy and well! SUGARY! but hey, frosting is supposed to be full of sugar!
these are perfect for a birthday party OR if ya feel like making something to just look pretty and taste pretty darn good!
I made these Vegan GF and Soy free like normal BUT check the recipe "notes" because you can also use regular flour!

Sprinkle Funfetti Cupcakes Vegan GF Soy Free

Ingredients
- ½ cup vanilla unsweetened almond milk
- ½ tsp apple cider vinegar
- ¾ cup sugar
- 1 ½ cups all purpose GF flour (I use Bob's Red Mill)
- ¾ tsp baking powder
- ¼ tsp baking soda
- pinch salt
- ¼ cup earth balance vegan butter (slightly melted)
- 1 tsp vanilla
- FROSTING:
- ¼ cup melted earth balance vegan butter
- 3 cups powdered confectioners sugar
- ½ tsp vanilla (optional, frosting won't be as white if you use this but it does add a little more flavor)
- 2 TBSP vanilla unsweetened almond milk
- 2 TBSP sprinkles + more for topping
Instructions
- in a small bowl mix you almond mik and applie cipder vinigar and let sit for 5-10 minutes until it thickens up
- in a large bowl mix all your dry ingredients, flour, sugar, baking soda, baking powder, salt, and stir
- add in you melted butter and vanilla
- add your "buttermilk" (the almond milk and vinigar mixture)
- mix well and then add your sprinkles
- fill cupcake liner ¾ the way full
- bake for 26 minutes (use a tooth pick to poke and make sure it's done before removing from the oven)
- ***LET COOL for at least 15-20 minutes before adding frosting!
- FROSTING:
- in a medium bowl add your butter and melt is
- add your vanilla and almond milk
- mix in you powdered sugar
- this will be a thick consistency but thats what you want1 you do not want it to be runny, if it gets runny ass more powdered sugar!
Notes
you can use regular all purpose flour in this recipe as well but you will need to add the flour to the mixture last because it will be ¾-1 cup depending on what kind of flour you use... you want a consistency thicker than cake mix but NOT as thick as brownie batter!
