Do you have plans for breakfast this weekend? … yes I know it’s only Tuesday but I know I’m not the only one who wakes up on Monday morning and is already thinking about getting to the weekend! 😉
Or maybe I should be asking do you have plans for lunch or dinner tonight? Cause’ these were totally my lunch and Nicks dinner! He is always happy to have breakfast for dinner, breakfast foods are definitely in the top 5 favorites for him with good reason especially if they are pancakes! Am I right?! 😉
OK! so if you live on TwoRaspberries like me then there's not much new about oat and banana pancakes right?! BUT I spruced them up a little by adding strawberries because strawberry and bananas go SO great together! don't you agree!? 😉
Anyways, if you don’t have plans I got ya’ covered! These pancakes are healthy and will give you energy! They are made with heart healthy oats processed into flour and provide all the fiber that oats give.
These pancakes are basically a bowl of oatmeal with banana, strawberry fruit and maple syrup on top…except in pancake form! Winning at breakfast right now! 😉
Of course if you are more of a French toast kinda person then I got ya cover there as well with this cinnamon French toast and this blueberry French toast! Cause’ what are friends for, right?!
To make these Banana Strawberry Oat Pancakes everything goes into the blender or food processor! First the oats go in and you process them until they turn into oat flour consistency, then you can add the rest and blend until smooth.
I used a ¼ cup measuring cup to scoop the batter out onto my non-stick skillet sprayed with non-stick spray. You can use butter if you want a more butter-y flavor but to keep these more on the healthy side I just went with spray.
Also just a quick side note: I put in the recipe that you can add a tablespoon of pure maple syrup to the batter to sweeten it up but in all honesty if you plan to top it with maple syrup and more fruit just skip the extra sugar because you won’t even notice it unless you plan to eat them plain. 😉 so take your pick of how you plan to eat em’ k?!
Also I want to just say a couple things about flipping these oat pancakes… wait until you see bubbles on the top before flipping this will ensure the bottom is fully cooked! Then you can carefully flip them, with this oat flour it’s going to be a little more fragile than the average white flour pancakes, but you won’t even notice once they are cooked on both sides, just the flipping process needs a little TLC! 😉 handle these oat pancakes with care.

Strawberry Banana Oat Pancakes are full of fiber from the oat’s healthy and easy to make! They are naturally sweetened, vegan and gluten free.

Ingredients
- - 1 ¾ cup rolled oats
- - 1 teaspoon baking powder
- - 1 medium ripe banana (½ cup smashed)
- - 3-5 fresh strawberries
- - 1 cup unsweetened vanilla almond milk (I like SILK brand)
- OPTIONAL:
- - 1 tablespoon pure maple syrup for sweeter pancakes
- TOPPING:
- - Maple syrup
- - Banana slices
- - Strawberries
- - Chocolate date sauce
Instructions
- Place the oats in a food processor or blender and blend until smooth like flour.
- Then add the rest of the ingredients (I personally don’t add the tbsp. of maple syrup because I top mine with syrup but it’s your choice) and blend until smooth!
- Spray a non-stick pan with cooking spray (before each new set of pancakes gets poured into the skillet) and pour the pancakes, I use ¼ per pancake.
- When pouring be sure to even it out using a spoon of the back of the measuring cup you poured with so it forms a nice shape!
- Cook on the first side until you see bubbles then carefully flip them! Oat flour is more fragile when flipping to be gentle!
- Continue until the batter is gone!
- Add toppings!
- Makes about 6-9 pancakes depending on size! I got 7 pancakes using ¼ cup each!
Notes
You can use vegan butter instead of cooking spray for more of a buttery flavor but I personally don’t just because I like to keep these lower fat but you can choose!
I like to top my pancakes with maple syrup so I don’t bother adding the tablespoon to the batter but if you need extra sweet-ness feel free to!

Oh I will handle them with care. Lots of care. I will very carefully devour the entire scrum-dilly-umptious stack!!!! This has my name written all over it! Banana + strawberry is a classic and one of my all time favorites, I used to just eat giant bowls of those two sliced up and sprinkled with sugar when I was little...we go way back. I love that you blended the berries right in, I so badly want a bite! I don't know where pancakes get their "indulgent" reputation, it really is just like a bowl of oatmeal. I think it must come from the maple syrup drowning part, but honestly I do that with oats too 😀 A pancakes-for-dinner night is calling my name now!
