This Superfood Quinoa Bowl has been so popular that I had to do an updated version.
I really think you are going to like it because it has a really different flavor! lots of textures going on and super simple to make!
I have been wanting to do another version for a while now and I finally did it!
This Superfood Quinoa Bowl 2.0 will knock your socks off my friends!
The other quinoa bowl one had a lightly seasoned olive oil dressing but this one has a Chili flavored dressing and ohhhhh my gosh let me tell you it is SO flavorful and not really spicy at all when it gets mixed in with all the quinoa and veggies superfood-ness going on in this bowl!
oh! ALSO it only takes 30 minutes to prepare so it's a winner winner! 😉
So, obviously I put different veggies in here too! Corn, peas , onion and broccoli taste like they just belong with quinoa!
The quinoa just got cooked plain because we are adding the dressing to it! I usually prefer to cook my quinoa plain because I like make bigger batches of it to keep in the fridge all week and add whatever flavors I feel like that day, to it. Meal prep ya’ll 😉 it never hurts to make your life a little easier day to day by being prepared, right?!
The dressing has a base of vegan mayo, now before you say what the heck?! Trust me on this it doesn’t taste like mayo or vegan mayo at all once we add tasty spices and lemon to it! …Just trust me, K?! 😉
The flavors are nutty from the quinoa, sweet from the corn and peas and fresh from the broccoli aka SUPERFOOD right there! Broccoli and quinoa are some of the healthiest foods there are!
This bowl makes a perfect lunch to pack for work or a pic-nick… I mean summer is coming very quickly!!! 😉 😉 😉

Of course it also makes a super de-ilsh dinner as well!

This Superfood Quinoa Bowl 2.0 takes only 30 minutes to prepare, and is full of flavor with a chili flavored dressing! Vegan and Gluten Free.

Ingredients
- ¾ cup dry quinoa cooked (I used mix colored, makes about 1 ½ cups cooked)
- ⅔ cup corn (can or frozen)
- ⅔ cup peas (frozen works best)
- 1 ½ cups chopped broccoli (chopped really small)
- ¼ of a small purple onion
- Fresh cracked pepper to taste
- DRESSING:
- 1 ½ TBSP vegan mayo
- ¼ tsp chili powder
- ¼ tsp onion powder
- Pinch of black pepper
- ¼ of a small lemon squeezed (about 1 ½ TBSP of juice)
- OPTIONAL: sesame seeds to sprinkle on top for added nutrition
Instructions
- Cook quinoa according to direction on package (should take about 15-20 minutes)
- While quinoa is cooking, spray a skillet or use a non-stick skillet and add your corn and peas to it, chop the onion and broccoli and add that as well. Sprinkle a little black pepper on top if you would like. Cook on medium heat about 10 minutes until softened.
- Once the veggies and the quinoa is done cooking make the dressing! Add the ingredients into a bowl and stir it up!
- Ready to serve! You can mix everything up and serve it with a drizzle of dressing over the top OR you can arrange it side by side on a plate like pictured and drizzle dressing over the top!
- Makes 2 large servings or 4 smaller servings.
