OK, so you may have already tried my Raspberry Nicecream if you have been around for a long time or maybe even the Blueberry Nicecream with Chocolate Date Sauce… if not go check them out they are some other favorites!
Today I wanted to go with a classic vanilla flavor with chocolate chips added… and of course with some EXTRA yummy toppings… cause the toppings are like the best part.
Let’s talk blender for a second, I like to use a Ninja mini food processor, it’s pretty much my favorite it blends up anything with ease! But of course you can use any high speed blender or food processor you would like… if you are having trouble blending it a tip is to let the banana that for 5 minutes and always start with pulsing before going into blending because it will get it all broken up and make the blending into creamy whip good-ness a lot easier on you and the blender.
You can easily switch up the flavors of the vanilla chip base if you would like by added different fruits or flavors like cocoa powder, maple syrup, nut butters etc.
For the toppings go crazy! I really liked the Strawberry Chia Jam on top of this vanilla chip flavor, it added an unexpected texture and flavor to this nice cream whip! I also love added the cookie because it gave more crunchy texture and it was like a texture and flavor party going on! Super yummy!
There’s still some warm weather left so go try it, who am I kidding I make this even in the winter… am I the only one like that???

Ingredients
2-4 frozen bananas (chopped before freezing)
2 frozen coconut milk cubes
1 TBSP vegan chocolate chips
TOP:
Chocolate chips
unsweetened shredded coconut
Vegan cookie (I Like the Enjoy Life cookies)
Instructions
- In a food processor or high speed blender (I like the mini Ninja food processor) add the frozen banana chunks and coconut cubes if using them, pulse first then blend until it becomes smooth, then add the chocolate chips and blend. (if having trouble let thaw for 5 minutes first and always stop and push sides down as needed)
- Add to a cup/bowl and top with toppings of choosing.
Notes
To make the coconut milk cubes, simple open a can of full fat coconut milk and pour into ice cube molds and freeze in the freezer.
