Vegan Blueberry Crumble Bars! Super quick and easy to make and only 9 ingredients!
Heyyyyy! Today I'm bringing ya some Vegan Blueberry Crumble Bars!!!
I decided to switch these up a little, instead of 3 separate layers for the "normal" crumble bars I wanted to make it only 2 layers by combining the middle and bottom layer together as well as making it a little less "pie" like and a little more "bar" like! I think your going to LOVE these!
So these bars were inspired by a bar that Nick likes to get from Starbucks, except the ones there are strawberry I believe and definitely not vegan! (Nick is not even close to vegan!)
Anyways he loves blueberries (like these muffins!) so I wanted to make my own version at home in blueberry anddd make them vegan!
So along came these pretty lil thangs 😉
The bottom in soft and chewy while the top is crumbly and toasted!
Like I mentioned above I combined the middle and bottom layer of these bars and let me just say, it turned out pretty bomb! The bottom layer is a cross between a cookie/cake/bar texture with pops of blueberry chunks!
And The crumble topping is welll.... The best part of the bar if you ask someone like meee who would literally sit down and eat the toppings off of almost all kinds of desserts! It's like the best part!
Especially the crumble topping on this apple crisp! 😉

Vegan Blueberry Crumble Bars
Vegan Blueberry Crumble Bars! Super quick and easy to make and only 9 ingredients!

Ingredients
- 1 cup u bleached all purpose flour
- ½ cup almond meal (I used Bob's Red Mill brand)
- 1 tbsp coconut sugar
- 2 tbsp melted vegan butter (I used Earth Balance brand in the red tub)
- 3 tbsp unsweetened vanilla Almond Milk (I used SILK brand)
- 1 ½ cups frozen blueberries
- 1 tbsp unbleached all purpose flour
- 1 tbsp vegan cane sugar
- 1 tbsp unsweetened vanilla Almond Milk (I used SILK brand)
- Crumble Topping:
- 1 ½ cup rolled oats
- 2 tbsp vegan butter soft NOT melted (I used Earth Balance brand in the red tub)
- 1 tbsp maple syrup
Instructions
- Pre heat the oven at 350 and spray an 8X8 pan with non stick spray
- In a large mixing bowl add your flour, almond meal, coconut sugar, melted butter and almond milk, mix everything together to form a dough.
- In a pan on medium heat add your blueberries, flour, sugar and almond milk and cook down stirring consistently until it turns into a saucy blueberry mixture!
- Mix the dough and blueberry mixture together (the blueberry mixture will loosen up the dough mixture)
- Spread evenly into the prepared pan
- Prepare your crumble topping by adding your oats, softened butter (not melted! Soft room temperature) and maple syrup together in a bowl and mix ( I used my hands to mix this)
- Spread crumble topping over the top evenly and bake for 24 minutes!
