So do you remember the Chili Pineapple Mango Salsa from last week?
Anyways it needed to go on a taco! Don’t you agree?
A crunchy corn taco shell filled with fresh + lightly seasoned quinoa, crisp shredded lettuce and topped with fruity, sweet, spicy and fresh Chili Pineapple Mango Salsa! that is my kind of taco!
Doesn’t this sound dreamy?
Well my friends let me tell you, it was! It definitely was!
The crunchy corn tacos shell was the perfect “chip like” tacos shell for this.
The nutty flavor of the quinoa which I seasoned very lightly was like the hamburger on a taco.
The lettuce I mean seriouslyyy if you want to use leafy style lettuce go for it but I had to stick with the traditional shredded taco style lettuce and it was perfect! 😉
And topping this taco with the Chili Pineapple Mango Salsa was like a flavor bomb of crunchy, fresh and sweet with a little heat (ha! You like my rhyme? Read that last line fast!) my mouth was on fire with happiness!!!
So these tacos would also be really great party food because you can prep everything in advance and just have it set up at a table for assembly! … just a thought for you party kind of people!… 😉
Me on the other hand, I’ll take my tacos for dinner, on the back patio sitting in front of a fire or watching the sun set… that sounds like perfection to me!
I think I’m going to go make that happen now!

- Cook Time: 20 mins
- Total Time: 35 mins

Ingredients
- 6 hard shell corn tacos
- ¾ cups dry mixed quinoa (cooked is about 1 ½ cups)
- ½ TBSP olive oil
- Fresh cracked black pepper
- Slice of lemon squeezed (about 2 tsp)
- ½ tsp onion powder (or garlic if you prefer)
- TOPPINGS:
- Chili Pineapple Mango Salsa
- Shredded lettuce
- Avocado
Instructions
- Prepare the quinoa according to directions on package.
- While quinoa is cooking prepare the Chili Pineapple Mango Salsa.
- Once quinoa is cooked add the rest of the ingredients to the quinoa (olive oil, cracked black pepper, lemon and onion powder) mix together.
- Assemble tacos! Taco shell, quinoa, lettuce, salsa, optional avocado.
- Makes about 6 tacos.
