Super Easy Vegan and Gluten Free Veggie Fried Potatoes, Perfect for dinner, and leftovers for lunch the next day!Â
So here's the thang, Â I absolutely love throwing things in a frying pan because not only is it easy, healthy and totally yum-o-rama deliciousness but it's also a great way to use up leftover veggies or ingredients that you have on hand but just haven't gotten around to using yet!
Hope everyone enjoyed a beautiful weekend! ... we headed over to my grandmas house to do some landscaping... we put some steps in for her to get to the back yard because the ones she had were looking pretty rough and we wanted it to be done before the snow flies, gotta keep it all safe!
lets just say it was a lot of shoveling dirt and lifting heavy cement steps! but at least the weather was pretty nice for us... what did you all do over the weekend?! 😉
anyways on to the colorful Veggies mixed with those yummy carb-y Potatoes
whats in it?
we got us  some Potato's but we chopped the into little bite sized pieces and we mixed them with some sweet carrots and snow peas, super filling broccoli and onion which in my opinion makes everything more flavorful!... And the Italian seasoning itself just adds so much flavor to this dish, it's just outa this world! (Feel free to add whatever other veggies you have on hand like some peppers, mushrooms, zucchini, squash any of it would be delicious)

Veggie Fried Potatoes Vegan and Gluten Free

Ingredients
- 3-4 Potato's (3 large or 4 small)
- 10-15 snow peas chopped
- 10-15 baby carrots chopped (or 2 large carrots)
- 1 ½ cup s chopped broccoli
- 1 whole onion (I used a yellow onion but choose whatever you like best)
- 3 Tbsp vegan butter
- Salt /Pepper to taste
- Italian Seasoning (thyme, oregano, and basil)
- garlic powder
Instructions
- Chose your Potato's (try and be consistent in the sizes so they all cook at the same time)
- In a large frying pan sprayed with non-stick cooking spray add you Potato's on medium heat
- Chop your carrots and onion and add then to the pan, let cook for 3-5 minutes
- While that is coking chop your broccoli into small pieces and add to the pan.
- Chop your snow peas into small pieces and add them to the frying pan
- Add the butter to the frying pan
- Salt/Pepper to taste and add your seasoning to taste, I used about 1 teaspoon salt, 1 teaspoon pepper and 2-3 teaspoon Italian and garlic seasoning
- Turn up to medium high heat and Let cook until everything is soft and cooked throughly approx 20 minutes after everything is added.
Notes
Add then to the pan in the order that I have them listed because the ones that take the longest to cook should be added to the pan first!
If you chop 1 thing at a time and add directly to the pan your timing should be right for each ingredient!
If you pre-chop everything first then you should let the Potato's carrots and onion cook for about 5-7 minutes before adding the rest of the ingredients!
