    Veggie Fried Rice Vegan and Gluten Free

    Easily customized to preferred tastes, Healthy, Vegan and Gluten free, super quick and easy Veggie Fried Rice!

    It's also a perfect meal to make in advance or make extra and save the leftovers for lunch or dinner the next day!

     

    Veggie Fried Rice

     

    It's no secret that I LOVE stir frys, for reals people, it's like my life... That and pasta ... Don't get me wrong I do venture out and eat other things and now days I'm trying to mix it up more and try things that I haven't tried before ... but when it's late and I'm tired these are just too easy to throw together and so easy to customize based on what you have on hand and what you are craving (like the lemon juice really jazzed up the flavor)

    it's Monday and I'm all about quick meals especially on a Monday (it's like the hardest day of the week)

    This beautiful fried rice is such a pallet pleaser full of healthy and filling veggies and if your a meat lover feel free to add some chicken or you can boil some chicken and chop it and put it in a pan with teriyaki sauce to add to the mixture (that's what Nick does- I don't eat meat ) 😉

    I  put Lemon juice on this rice because it's a great switch up to a teriyaki sauce on all the rice and no sodium! (ya know when you get rice take-out and sometimes feel swollen the next day... thats all the sodium!)

    Veggie Fried Rice Vegan and Gluten Free

    Ingredients

    Scale
    • 4 ½ cups of instant minute rice
    • 1 ½ cups chopped broccoli
    • 15 large snow peas chopped
    • 1 whole onion (I used a yellow one but whatever you like works)
    • 2-3 small orange peppers
    • 1 ½ cups chopped mushrooms
    • 5-6 pieces of green scallions/green onions
    • â…“ cup olive oil
    • 3 Tbsp vegan butter ( I used earth balance)
    • Salt/Pepper to taste
    • Lemon juice (optional)

    Instructions

    1. In a large microwave safe bowl cook your rice per instructions (mine was 4 ½ cups of rice and 4 ½ cups water) and put in for the amount of time it says on your rice
    2. Spray a large frying pan with non stick cooking spray and chop your broccoli and add it to the pan on medium heat
    3. Next chop your onion, snow peas, and peppers and add them to the frying pan
    4. Let that cook for about 5 minutes on medium heat and then chop your mushrooms and add the to the pan.
    5. Let that continue to cook until your rice is done, once the rice is done carefully add it to the frying pan over the vegetables, add your butter, olive oil salt and pepper
    6. Stir and turn heat to high and keep mixing for about 5-7 minutes tasting and adjusting to your taste.
    7. Once it's fully cooked turn the heat off and either serve OR add the optional lemon juice, it gives it a very strong kick of flavor I would suggest trying it before adding it to the whole mixture, I liked it both ways to be honest I dished mine up in a large bowl and put lemon juice on half of my rice! Lol I like variety and bites of everything 😉

      I adore fried rice! So many fun takeout memories 🙂 Stir frys are the best, especially on rushed days. This vegan version sounds right up my alley, especially the snow peas. Great recipe Michele!

      Sorry this ranks in my top 10 of the worst dishes ive tasted, utterly bland, the instructions are useless, no times or guides given. We honestly felt sorry for the person who wrote this (after the anger subsided) as we though they may be a student! Honestly AVOID.

        I'm sorry to hear that you didn't enjoy this recipe, my family and I love this recipe and actually eat it quit frequently! I do understand that we have very clean+healthy taste buds and you'll find most recipes on here are meant for those who eat quit healthy! Obviously our tastes buds don't match and that's OK everyone is different! I'm sorry you could not alter it to suit you as you were cooking it, as I encourage creativity since everyone has such different tastes!
