These are not “recipes” these are things that I have eaten in the last 1-2 weeks that I would like to share with you for food inspiration, maybe spark some ideas for you. Eating vegan doesn’t need to be difficult or stressful, a little meal prep and it’s just as easy as fast food! I hope you enjoy these and get inspired to get in the kitchen and throw together something healthy with what you already have on hand! 😉

Hey Lovely internet friends! 😉 Today I wanted to share something a little different with you, if you follow me on social media you may have already seen these but for those of you who don’t I wanted to share over here on the bloggy too! 😉 plus over here I get to say a little more with everything!
So I wanted to share with you a “What I Ate” post … this isn’t a what I ate today post though, it’s a post with things that I have eaten this past week, these are not necessarily recipes, they are just for food inspiration, I want you to feel inspired to get in your kitchen and use whatever you have on hand to make something healthy and EASY! I am ALL about easy + stress free food. 😉
So about that stress free food thing, a little food prep yall! I know you hear that all the time but really, just pick 1-2 grains to prep and keep in the fridge so it’s easy to grab and put a quick lunch together, have other fresh things on hand like beans, salad mix, nuts, fruit etc. Prep an easy dressing so that everything is ready and you just have to toss it all together!

Okay! On to the food, I hope it inspires you to get creative! 😉
I'm calling this Strawberry Pineapple Slush it's super sweet and slushy 😉 it's just Ice, strawberries, pineapple, and coconut water blended! it's quick and easy, I have smoothies pretty much EVERY morning, on occasion I might make some waffles (which I usually make and freeze so they are ready!) but that's generally a weekend food, smoothies are just too easy and tasty!
this I am going to call... Orange Quinoa Salad! Quinoa with dressing combined in a bowl: 1tsp olive oil, ½ teaspoon onion powder and spicy mustard, pinch salt + pepper and ¼ lemon squeezed over everything! with orange slices and spinach!
I made a big batch of this quinoa and we had it a couple times this week with different things on the side! when you prep the time consuming things, it makes it easy to eat healthy and fast!
Qunioa and Sauteed Veggies!
Quinoa with dressing combined in a bowl: 1tsp olive oil, ½ teaspoon onion powder and spicy mustard, pinch salt + pepper and ¼ lemon squeezed over everything! sauteed veggies on the side (mushrooms, onion, broccoli, and carrots)
even with these I made the veggies in advance, I understand that's not for everyone some people don't like it after it's a day old from the fridge but I don't mind at all, I don't even heat it up a lot of the time, it's just what I do, everyone has to find their own way I am just sharing my own prep ideas! 😉

Pasta + Beans+ Greens!
leftover pasta with a little bit of olive oil + salt + pepper, plain black beans, spring mix lettuce, and a side of cooked green beans (those are just frozen ones that I microwaved)
THIS may have been my favorite this week, I ate it like 3 times, for some people this might be boring or plain but it's was DELICIOUS!!! (maybe because I used a white wrap? LOL usually I try to use GF or corn wraps but I was out so I had to use Nick's wraps 😉
Easy Salsa + Bean Wrap
wrap, spring mix lettuce, black beans, avocado, salsa (store bought organic)
Blueberry Nice Cream!!!!
2 ½ frozen bananas, ½ cup frozen blueberries 1-2 tablespoon water blended until ice cream consistency!
(you will need to stop and scrape the edges down several times to get it blended smooth, if you add more water it will be runny and not thick like pictured, practice and you'll get it) 😉
