Ingredients

cup
vanilla almond milk PLUS 1 teaspoon white vinegar
2 ¼
cups
all purpose gluten free flour
1 ½
teaspoon
baking powder
1
pinch
salt
1 ½
teaspoon
sugar
1 to 1 ½
tablespoon
pumpkin spice
depending on how strong you want it

olive oil
¼
cup
maple syrup

teaspoon
vanilla
optional mix in:
chopped vegan chocolate chips
topping suggestions:
banana for topping or fruit of choice
maple syrup for topping
vegan butter for topping
Instructions
First turn your waffle iron on so it can heat up, I put mine on high heat but read your waffle iron instructions because they all differ.
Next in a small bowl put your almond milk and vinegar and stir, let sit while mixing other ingredients.
In a large bowl add you GF flour, bakind powder, salt, sugar, pumpkin spice and mix it all together.
Then add you olive oil, maple syrup, and vanilla and mix.
Add you almond milk and vinegar mixture and stir just until no lumps are in the batter, try not to over mix the batter.
Transfer into a cup so it's easy to pour into the waffle iron.
Cook according to your waffle iron instructions.
Enjoy.
