Strawberry Banana Oat Pancakes are full of fiber from the oat for a healthy and easy to make breakfast! They are naturally sweetened, vegan and gluten free.
Place the oats in a food processor or blender and blend until smooth like flour.
Then add the rest of the ingredients (I personally don’t add the tbsp. of maple syrup because I top mine with syrup but it’s your choice) and blend until smooth!
Spray a non-stick pan with cooking spray (before each new set of pancakes gets poured into the skillet) and pour the pancakes, I use ¼ per pancake.
When pouring be sure to even it out using a spoon of the back of the measuring cup you poured with so it forms a nice shape!
Cook on the first side until you see bubbles then carefully flip them! Oat flour is more fragile when flipping to be gentle!
Continue until the batter is gone!
Add toppings!
Makes about 6-9 pancakes depending on size! I got 7 pancakes using ¼ cup each!
Notes
You can use vegan butter instead of cooking spray for more of a buttery flavor but I personally don’t just because I like to keep these lower fat but you can choose!I like to top my pancakes with maple syrup so I don’t bother adding the tablespoon to the batter but if you need extra sweet-ness feel free to!
