This Strawberries and Cream Oatmeal recipe is vegan and loaded with strawberries taking less than 15 minutes to make on the stove top. Fresh strawberries and yogurt added to the strawberry oats gives the most magnificent strawberry oatmeal flavor.
Add the strawberries and maple syrup to a stove top pan and cook on medium heat mashing it with a fork for about 3 minutes until it’s slightly sweet smelling.
Add the oat milk and rolled oats with a pinch of salt and stir on medium heat for about 6 minutes until creamy and cooked.
Stir in the yogurt and cook for another 1 minute until warm.
Let cool and thicken for about 5 minutes and then serve topped with more fresh strawberries and a splash of extra milk if you desire.

Milk: Any dairy free plant milk will be fine to use.Yogurt: Any non-dairy yogurt will work great. For more sweetness try a strawberry flavored yogurt and for less sweetness try a plain vanilla unsweetened yogurt.Strawberries: If using frozen strawberries, let them thaw out completely first (overnight in the fridge) otherwise you won’t be able to finely chop them.More Strawberry Flavor: If you want to really amp up this recipe you could add some strawberry jam on top after cooking while it's still warm. Or you could blend up some freeze-dried strawberries and stir them in while the oats are cooking, this will give a more tart flavor.
