¾cupmashed ripe banana(mash then measure - about 2 bananas - 225 grams)
½cuppure maple syrup(170 grams)
⅓cupvegan yogurt(80 grams - I used unsweetened coconut yogurt)
⅓cupcashew butter(or any nut butter - 80 grams)
⅓cupcocoa powder(28 grams)
2 ¼cupsold fashioned rolled oats(processed into flour - 191 grams)
1teaspoonbaking powder
¼cupvegan chocolate chips
Instructions
Prep: Process the oats into flour using a food processor or high speed blender. Grease or line an 8x8 baking pan with parchment paper. Pre heat the oven to 375° F.
In a large mixing bowl add the wet ingredients maple syrup, cashew butter, yogurt and mashed banana and whisk together.
Fold in the dry ingredients using a spatula, oat flour, cocoa powder and baking powder.
Fold in the chocolate chips, reserve some for sprinkling on top.
Add the batter to prepared baking dish and bake in the oven on the middle rack for 23 minutes. Let cool 15-30 minutes before removing from the pan and cutting into them. Store in a sealed container on the counter for about 3 days.

Oat Flour: I used old fashioned rolled oats and blended them into flour, you can use store bought oat flour as well but do not use quick oats or steel cut oats.Measuring: Using a kitchen scale is the most accurate way to measure ingredients, if you don't have one be sure to be very precise and use dry measuring cups for dry ingredients and wet measuring cups for liquid.
