These Peanut Butter Energy Balls are so simple to make and make the best on the go snack. Oats, peanut butter and medjool dates make these gooey and delicious.
½cupmedjool dates(about 8 dates - pitted - soak in warm water if not soft and gooey)
1cupnatural peanut butter(or any nut/seed butter you like)
1pinchsea salt
1tablespoonhemp seeds
¼cuppure maple syrup(see notes)
⅓cupmini vegan chocolate chips(optional)
Instructions
Add the oats to the food processor and pulse until broken up, then add the oats to a mixing bowl.
Next add the pitted dates, peanut butter, sea salt and hemp seeds to the food processor and blend until a paste forms. Add this to the bowl of oats.
Use your hand to mix it all up, if dry add the maple syrup, if nice and moist start forming balls. (add chocolate chips if you want before rolling).
Makes about 14 balls, store in a container in the fridge up to 1 week or freeze up to 3 months in a freezer bag.

Notes
Dates: If your dates are not soft and gooey be sure to soak them in warm water for 15 minutes and then drain it, this will help to soften them up a bit. Also be sure to take the pits out.Maple Syrup: I like to add this, it helps it to be moist and gooey. This is listed as optional because if you have fresh oily natural peanut butter sometimes it can be moist enough to not need the maple syrup. I recommend make the recipe first without the maple syrup and seeing what the consistency looks like, if you are happy then great if not add the maple syrup right into the dough mixture and mix it all up.
