This Vanilla Chia Pudding is super easy and great for meal prep. This chia vanilla pudding is sweetened with maple syrup and completely vegan and dairy free.
1cupnon-dairy milk(I like oat and cashew milk best, unsweetened vanilla flavor)
½tablespoonpure maple syrup
½teaspoonvanilla extract
toppings:
fresh fruit, granola, vegan yogurt, nut butter
Instructions
To a jar or container add the chia seeds, non-dairy milk, maple syrup and vanilla. Then use a whisk to make sure it's all combined well. Place in the fridge for 30 minutes.
Remove from fridge and whisk again to work out any clumps. Place back in the fridge for at least 1-2 hours (the longer the better) and then add your toppings of choice and enjoy.
Store leftovers in the fridge up to 5 days.

Notes
Vanilla: I used vanilla extract, you can also use fresh vanilla bean of vanilla bean paste. Both the second options are more potent so I would not use as much of them.Milk: I used oat milk but you can also use canned coconut milk for a more dense, thick and creamy vanilla chia pudding.
