This Chocolate Chia Seed Pudding is a nutritious way to eat chocolate for breakfast! Whip it up the night before and add your favorite toppings in the morning for a quick and easy way to start your day!
In a mixing bowl add the oat milk, maple syrup, and vanilla and whisk.
Add the chia seeds and cocoa powder.
Whisk vigorously (about 3 minutes to get the cocoa to incorporate) until everything is well combined.
Cover the bowl or transfer to 2 smaller cups or mason jars to place in the fridge overnight or at least 3 hours.
When ready to serve, remove from the fridge and top with desired toppings.
Store in a sealed container in the fridge 2-3 days.

Clumps: I like to remove it from the fridge after about 1 hour and give it another whisk to work out any clumps. This is not required but it definitely makes a difference in my opinion. You can just stir really well before serving as well.Milk: Use any non-dairy milk (oat, coconut, soy) you like best.
