In microwave safe bowl add your vegan chocolate chips and coconut oil and melt in 10-20 second intervals stirring in between until smooth and creamy. (Optional reserve 2 tablespoons to drizzle on top after it sets in the freezer for extra fancy design)
Add your peanuts and stir really well!
Line a baking sheet with parchment paper and use a medium cookie scoop or large spoon to scoop out piles of chocolate peanuts. (optional sprinkle with sea salt)
Freeze peanut clusters for 20 minutes to harden and then remove them to enjoy!
If drizzling with extra chocolate then do that now and return to freezer another 5 minutes to set. Store in the freezer up to 1 month or fridge 1 week

Chocolate: I like Enjoy Life brand of chocolate chipsLiners: You could also use cupcake liners to scoop them into (regular or mini) and then follow the rest of the same steps, line baking sheet place the cup cake liners on there, fill them ½ way and freeze until set.Mix Ins: Feel free to mix it up and make some "rocky road" treats also by adding some mini marshmallows and maybe even some cinnamon graham cereal pieces. (If you add extra ingredients be sure to cut back on the amount of peanuts or increase the amount of chocolate)Nuts: Other nuts that work well in place of or in addition to the peanuts would be almonds, walnuts or cashews.
