This Strawberry Chia Seed Pudding takes less then 10 minutes to prep and only 5 simple ingredients. This chia seed pudding with strawberries is great for meal prep.
1cupnon dairy milk(I like oat and cashew milk best)
1tablespoonpure maple syrup
10mediumfresh strawberries(about 8 ounces)
⅓cupchia seeds
½teaspoonvanilla extract(optional)

Enjoy topped with fresh fruit, vegan yogurt, nut butter, nuts or granola.
Instructions
First make the "strawberry milk" in a blender add the non dairy milk, maple syrup, yogurt and strawberries and blend until smooth.
Add the chia seeds to your bowl or jar, then add the "strawberry milk" and whisk together. Place in the fridge for 30 minutes.
Remove from the fridge and whisk again to work out any clumps. Place back in the fridge for at least 1-2 more hours (the longer the better).
Enjoy topped with fresh fruit, vegan yogurt, nut butter, nuts or granola.
Store in the fridge for about 5 days.

Blended: For a blended chia seed pudding place all the ingredients including the chia seeds in the blender and blend until smooth. Then follow the rest of the same steps listed above.Strawberries: Make sure they are sweet and ripe, if they are under ripe of not sweet this will not be a very sweet chia pudding and won't be a good. I like to wait until my strawberries are very red and almost soft, not rotten soggy soft but soft to the touch not firm.
