These Strawberry Overnight Oats and super easy to whip up and naturally sweetened with maple syrup. Great for meal prep and totally vegan and dairy free.
Add the 5 fresh strawberries to a blender with the non-dairy milk, maple syrup and vanilla and blend until creamy smooth.
Add the oats, chia seeds and chop up the other 2 fresh strawberries and add to a jar or bowl then addd in the "strawberry milk" mixture and whisk together. Place in the fridge for about 15 minutes.
Remove from fridge, whisk out any clumps and then return to the fridge for at least 3-4 hours preferably overnight. Can store in the fridge for up to 5 days.
When ready to enjoy add your favorite toppings, I like nut butter and banana the best.

Yogurt: Yes you can add 2 tablespoons or so of your favorite vegan yogurt if you would like, it's just my personal preference I don't like it mixed in but I don't mind topping it with vegan yogurt.Blended: For a blended chia seed pudding place all the ingredients in the blender and blend until smooth. Then follow the rest of the same steps listed above.Strawberries: Make sure they are sweet and ripe, if they are under ripe of not sweet this will not be a very sweet chia pudding and won't be a good. I like to wait until my strawberries are very red and almost soft, not rotten soggy soft but soft to the touch not firm.
