- Non-dairy milk: I like oat milk, cashew milk, and almond milk the best.
- Pure Maple Syrup: Make sure to use pure maple syrup not a sweetened variety. This is the natural sweetener used in these Vanilla Overnight Oats.
- Old Fashioned Rolled Oats: These work the best as they get nice a soft.
- Vanilla Extract: You can use vanilla bean or vanilla bean paste but they are more concentrated so use less.
- Fresh Strawberries: Make sure they are sweet and ripe, if they are under ripe of not sweet this will not be a very sweet chia pudding and won't be a good. I like to wait until my strawberries are very red and almost soft, not rotten soggy soft but soft to the touch not firm.

Step 2: Add the oats, chia seeds and chop up the other 2 fresh strawberries and add to a jar or bowl then addd in the "strawberry milk" mixture and whisk together. Place in the fridge for about 15 minutes.
Step 3: Remove from fridge, whisk out any clumps and then return to the fridge for at least 3-4 hours preferably overnight. Can store in the fridge for up to 5 days. When ready to enjoy add your favorite toppings, I like nut butter and banana the best.

- 1 tablespoon chia seeds
- ¾ cup non-dairy milk (I like oat, cashew or almond milk best)
- 1 tablespoon pure maple syrup
- ½ teaspoon vanilla extract (can use vanilla bean or vanilla bean paste but they are more concentrated so use less)
- 5 large fresh strawberries
- 2 extra fresh strawberries (for chopping and stirring into the overnight oats_

- nut butter, banana, fresh fruit, granola, nuts, seeds, unsweetened shredded coconut, yogurt.

Yogurt: Yes you can add 2 tablespoons or so of your favorite vegan yogurt if you would like, it's just my personal preference I don't like it mixed in but I don't mind topping it with vegan yogurt.
