- Pure Maple Syrup: Make sure its pure not the kind with added sugars.
- Coconut Oil: The "glaze" for these balls, mixed with sweet maple syrup gives a nice melt in your mouth crackly texture.
- Medjool Dates: I used medjool dates, if your dates are hard and not gooey soft you may need to soak them in warm water for 15 minutes and then drain the water before using them.
- Old Fashioned Rolled Oats: Important to use old fashioned and not quick oats, as quick oats tend to be sticky.
- Cashews: I chose cashews because they are a nice mild and creamy flavor nut that compliments the sweet dates really well.
Variations
- Switch up the nuts: Although I like cashews the best, you can use any nut you like in this recipe, almonds, peanuts, walnuts, pecans.
- Chocolate coating: Not into the coconut "glaze"? Try either skipping the glaze or using melted vegan chocolate chips instead.
How to make Caramel Coconut Donut Holes
- Step 1: First you want to blend the oats and cashews into a chunky flour consistency, after that you can add the salt and sticky ingredients which are maple syrup and pitted dates, pulse the food processor until everything is a sticky mixture scraping the sides down as needed and then roll them into balls!
- Step 2: Placing the balls on a lined baking sheet and in the freezer to firm up!
- Step 3: Melt the “glaze” mixture in a small bowl and dip each one into the glaze and place back in the freezer to harden, repeat this 2-3 times until you have a nice coating on the outside of each caramel coconut glazed donut hole!

Caramel Coconut Donut Holes
Ingredients
For the balls:
- ½ cup old fashioned rolled oats
- ¾ cup raw cashews
- ½ cup pitted dates
- pinch sea salt
- ¼ cup pure maple syrup
Optional glaze:
- 1 tablespoon pure maple syrup
- 1 tablespoon melted coconut oil
Instructions
- In a food processor add the oats and cashews and blend until all broken up into a chunky flour consistency. (about 15-30 seconds)
- Next add the pitted dates, sea salt and maple syrup and pulse until all combined and it forms a sticky but well incorporated consistency, push sides down as needed.
- Line a baking sheet with wax or parchment paper, remove blades from food processor, scoop out golf ball sized balls and roll them and place on the lined baking sheet.
- Freeze for 5 minutes.
- In a small bowl add the coconut oil and microwave it if it’s not already liquid consistency, add the maple syrup to it and stir it up.
- Remove balls from freezer and roll them in the glaze mixture and place back on the lined baking sheet, back in the freezer for 10 minutes.
- Repeat 1-2 more times until you reach a glazed look on the outside of the balls!
- Store in the fridge up to 1 week or freezer 1 month.
