Ok I’ll admit sometimes I love baking and sometimes I just prefer a simple toss together no bake sweet treat, it really just depends on why mood ya know?! Plus sometimes I like treats that you can make in advance and just store in the freezer so you have yummies on hand that require NO making and they're just ready to pop in your mouth and enjoy a minute of bliss, ya know what I mean?!
Simple steps and yummy flavors of these Coconut Cookie Bites:
- everything literally just goes in a big bowl to get mixed up and then you form balls and place in a dish or lined baking sheet in the freezer and let them set, that’s it! Enjoy pre-made yummy sweet and healthy treats whenever you need them!
- FLAVORS… besides yummiest treat ever at the moment… sweet from the maple syrup, savory from he raw cashew butter and chewy from the shredded coconut! I mean can you get better than that? Ahhh yes hello the chocolate chips they make everything better!!!
- If you keep these in the freezer they last long when you go rot eat them because they are warm up in your mouth and slowly melt and become chewy but if that’s not your thang’ then straight from the fridge is cool, it’s soft and chewy and totally yum!

Ingredients
½ cup raw cashew butter (or nut butter of choice)
½ cup pure maple syrup
2 cups unsweetened shredded coconut
⅓ cup vegan chocolate chips
Instructions
- In a large mixing bowl add the cashew butter and maple syrup and mix, then add in the shredded coconut and mix, then stir in the chocolate chips!
- Roll into golf ball sized balls and place on a baking sheet or glass dish and pop in the freezer to set (about 30-60 minutes) and enjoy!!!
Notes
Keep stored in the freezer for up to 1 month or the fridge up to 1 week.
