Variations
- Nut Butter: I love cashew butter because of the mild and creamy flavor it really lets the coconut shine here but feel free to use any nut or seed butter you like best.
- Bars: You don't have to make them into balls, you can easily line a baking dish and spread the mixture evenly, place in the freezer for about 10 minutes to set and then remove and slice into bars. Store the same way as the balls, fridge 1 week or freezer 1 month.
How to make these Coconut Energy Balls
Everything literally just goes in a big bowl to get mixed up and then you form balls and place on a dish or parchment paper lined baking sheet and place in the freezer and let them set, that’s it! Enjoy pre-made yummy sweet and healthy treats whenever you need them.
Step 1: In a large mixing bowl add the cashew butter and maple syrup and mix, then add in the shredded coconut and mix, then stir in the chocolate chips!

Step 2: Roll into golf ball sized balls and place on a baking sheet or glass dish and pop in the freezer to set (about 30-60 minutes) and enjoy!!!

- Double the Recipe: I usually will double or triple the recipe because I love to have easy grab and go snacks on hand.
- Use Unsweetened Shredded Coconut: This is important not just because we don't want the added sugars but the sweetened coconut also has more moisture so it will lead to a sticky texture.
