I absolutely love cookie dough, as a kid I would just eat bites of the cookie dough that was being made for cookies. Now that I'm an adult not only would I like it to be healthier but also safe to eat. (White flour should not be eaten raw it needs to be heat treated like I do for my edible cookie dough recipe, and raw eggs? no thanks not for me) That's why I am so obsessed with this Healthy Cookie Dough because not only is it easy to make but safe for you (or the kids) to taste test while making it. We use oat flour to make this oat flour cookie dough so there's no need to heat treat the flour. I know you will love how easy this healthy edible cookie dough is.

Ingredients

- Oat Flour or Oats: I used rolls oats and processed them into a flour. This gives a nice hearty texture.
- Pure Maple Syrup: I like to keep it refined sugar free so this Healthy Cookie Dough is sweetened with pure maple syrup.
- Nut Butter: I like to use cashew butter for the best "cookie dough" flavor but I also love peanut butter and almond butter as well. You can also use sunflower seed butter for a nut free version of this Healthy Cookie Dough.
- Oat Milk: This is listed as ¼-1/2 cup. This will really depend on personal preference, how thick or thin you like your vegan oat flour cookie dough. Personally I used the ½ cup but it's really up to you. You can substitute any milk.
- Vegan Chocolate Chips: I used vegan chocolate chips, feel free to use any chocolate chips you like. My favorite brands are Enjoy Life for regular sugar option, Hu Chocolate for refined sugar free option using coconut sugar and Just Date for a date sweetened option.
- Vanilla Extract: Do not skip this, this gives you a true cookie dough flavor.
- Sea Salt: This is optional but highly recommended, it's just a nice flavor in all cookies and cookie dough in my opinion.
Variations
- Protein: You can swap out some of the oat flour for vanilla protein powder if you want, 1:1 ratio but I would not exceed ⅓ cup it will change the flavor too much. Or you can check out my Cookie Dough Protein Balls recipe.
- Nuts: If you love a crunch in your Healthy Cookie Dough feel free to chop some up and toss them in. A few good suggestions would be almonds, macadamia nuts or pecans would taste great in this oat flour cookie dough.
- White Chocolate: I used vegan chocolate chips (I like Enjoy Life, Hu Chocolate and Just Date brands) but if you want you can absolutely substitute or add white chocolate chips to this Healthy Cookie Dough.
- Cinnamon: Adding a dash of cinnamon would also be a great addition.
How to make Healthy Cookie Dough

Step 1: Place the oats in a blender and blend until smooth.

Step 2: Add oat flour to a bowl with the rest of the ingredients (not the chocolate chips), maple syrup, nut butter, oat milk, vanilla and salt. Mix well.

Step 3: Fold in the chocolate chips. Enjoy immediately or roll into balls and place in the fridge in a container for up to 4-5 days.

Expert Tips
- Storing: I store mine in a sealed container in the fridge up to 1 week.
- Freezing: You can make these into balls and store them in a freezer safe container or freezer zip lock bag for up to 3 months. Roll them into balls and place them on a parchment paper lined baking sheet and freeze them solid first, then store in a container or bag. I like to roll them into smaller balls so they are bite sized and I don't have to thaw them, I can just pop one in my mouth right from the freezer, so good!

- 1 teaspoon vanilla extract
- 1 pinch sea salt (plus flakey sea salt to sprinkle on top)
- ⅓ cup vegan chocolate chips (I like Enjoy Life, Hu Chocolate and Just Date brands)
