- Powdered Sugar: The best way to measure powdered sugar is a kitchen scale but if you don't have one be sure to spoon and level into you measuring cup, careful not to pack it.

How to make this Vegan Cream Cheese Frosting:

Step 1: To make the vegan cream cheese frosting, add the vegan cream cheese, vanilla and softened butter to a large mixing bowl, using a hand blender cream together.

Step 2: Slowly add the powdered sugar in, I added 3 times before using it all up.

Step 3: Frost fully cooled cupcakes or cake right away or store in the fridge up to 1 week. If storing in the fridge you will need to remove and let soften about 5 minutes and if still stiff up the hand mixer to whip up again until creamy smooth.
Expert Tips
- Soften the Butter: I used Miyokoโs butter in this recipe, be sure to soften it to room tempeture before mixing together.
- Packing: When filling the measuring cup with powdered sugar do not pack it into the cup, if you pack the cup youโll have too much powdered sugar in the recipe. With a spoon you can lightly scoop the powdered sugar into the cup and level the top off. As always a kitchen scale is the most accurate way.
- Be sure baked good is cooled: Itโsimportant, make sure the item you are topping is cooled off completely, if itโs not the Vegan Cream Cheese Frosting will melt right off or into the item.
- Storing: You do need to refrigerate what ever you have frosted, the butter and the Miyokoโs cream cheese I used needs to be refrigerated in a sealed container for up to 4-5 days for the frosting, but also follow how long the recipe you made says itโs good for, if it says 2-3 days than thatโs how long itโs good for.
