Fudge was one of my grandpas absolute favorite desserts (although he liked a lot of desserts)! He wasn’t vegan, so of course his wasn’t vegan fudge but I can guarantee you he would have loved this vegan fudge (he is no longer with us) and would have never even realized it was vegan.
I have a lot of memories with my grandma and grandpa, my grandma is still here with us, she has done more for us grand-kids and made more memories than we could ever thank her for. They were a big part of my life growing up. Anyways this post is dedicated to grandps, I can still see his smile and how his eyes would light up like a kid. He wasn’t much of a talker through his life until after he retired, then he became much more social, but when he did talk he was very kind and he had a lot of belief in all his grand-kids the kind of belief that anything was possible. I love you grandps you are missed by all of us.

- Canned Coconut Milk: Make sure it's from the can not from the refrigerated section (not the drinking coconut milk) and make sure it's not condensed.
- Vegan Chocolate: It can be chocolate chips or a bar chopped up.
Variations
- Add nuts: This rich chocolate Vegan Fudge that tastes absolutely excellent the way it is you can easily add nuts to the mixture or sprinkled on top of the bars. Some suggestions are walnuts, pecans, hazelnuts, almonds or what ever your favorite nuts are, I would chop the nuts up a little bit first.
- Fudge white chocolate: If you prefer white chocolate you can use vegan white chocolate chips in place of the vegan chocolate chips. Of course it will change the taste of this chocolate fudge a little.
- Size: This 2 ingredient fudge can definitely be cut to any size you’d like. I get about eight 3 inch squares with this recipe, but you can easily double up this recipe so you don’t run out of this tasty no bake fudge.
- Fudge Balls: This healthy no bake vegan fudge is great as squares but you could also make them into balls. Follow the same steps to make the fudge squares but once it is set, take a 1 ounce cookie scoop and scoop out fudge balls and roll between your hand to form a ball. Store the same way as the fudge squares.
How to make Vegan Fudge
Prep: Step 1: First place your chocolate in a mixing bowl, chop if necessary if using a bar.
Step 2: Place coconut milk in a smaller bowl and microwave about 30 seconds you want it to be really hot but not boiling.
Step 3: Pour coconut milk on top of the chocolate and cover immediately with a dish towel, for 5 minutes.
Covered up!
Step 4: Un-cover and stir gently trying not to get too much air whipped into it, if it needs to melt more then simply place in the microwave for a few more seconds and stir gently until smooth.
Creamy Smooth!
Step 5: In a loaf style pan (I used a 4x6 glass pyrex) line it with parchment or wax paper, pour the mixture in and place in the fridge for 1 hour or overnight.
Step 6: Pull the parchment paper up to release and place flat on a table or cutting board, cut into squares or rectangles. Makes about eight 3 inch pieces. Store in fridge for 1 week or freeze up to 1 month.
