Preheat the oven to 350˚F and spray a 8x12 baking dish with non-stick cooking spray.
Start by washing and slicing the apples. (peel the skin if you desire, I left the skin on for texture)
Place the sliced apples either in a large bowl or directly into the baking dish.
Melt the butter in a microwave safe bowl in 15 second intervals. Add the melted butter, brown sugar, flour, cinnamon and all spice sprinkled over the apples. Use your hands or a spatula and toss around until the apples are fully coated.
Make the crumble topping, using a microwave safe dish, melt the butter in 15 second intervals in the microwave. add the oats, brown sugar, cinnamon and pecans into the bowl with the melted butter and stir it all up.
Pour the crumble topping over the coated apples and place in the oven for 65 minutes to bake.
Store in the fridge for 3-4 days.

Notes
Apples: I used honey crisp apple because its a nice sweet flavor without being too overpowering, but feel free to use whatever is your favorite apple. I also left the skin on the apple because I wanted the extra texture but you can peel all the skin or none at all whichever you prefer. I also sliced my apples but if you prefer them chopped feel free to do so.Butter: I use Miyokos or Earth Balance vegan butter.Toppings: If you absolutely love the toppings feel free to double the recipe for the crumble topping
