Almond Coconut Bliss Bites
- 1 cup natural runny almond butter
- 1 ½ tablespoon pure maple syrup
- 3 ½ tablespoon unsweetened shredded coconut (plus more for topping)
- 2 tablespoon vegan chocolate chips or raw cacao nibs
mix everything in a bowl and rolls into balls, top with coconut and place in freezer for 30 minutes to set! store in freezer up to 1 month!
makes about 12 balls - store in fridge up to 1 week or freezer up to 2 months
Chewy Date Walnut Cookies
- ½ cup packed pitted medjool dates (about 6-7 dates)
- ½ teaspoon vanilla
- ⅓ cup walnuts
- 3 tablespoon oats
- 1 tablespoon cocoa powder (sub cacao or carob)
- 1 tablespoon vegan chocolate chip or raw cacao nibs
add walnuts, oats and cocoa to food processor and pulse until broken up.
add in dates, vanilla and chocolate chips and blend until crumbly and well combined.
shape into cookies and place in freezer 30 minutes to set.
store in fridge 1 week or freezer 2 month
makes about 6-7 cookies
Lemon Coconut Bars
- ½ cup packed pitted medjool dates (about 6-7 dates)
- 2 2/1 tablespoon lemon juice (about half a medium lemon)
- 1 tablespoon natural runny almond butter
- 2 tablespoon oats
- 2 ½ tablespoon unsweetened shredded coconut (plus more for topping)
in a food processor add everything and pulse until broken up and well combined but still chunky.
line a dish with parchment paper, spread evenly and sprinkle with coconut on top.
FREEZE OVERNIGHT to set!
store in freezer up to 1 month.
makes about 6 squares
