Santa’s Chocolate Chip Cookie Bars are a twist on the traditional classic chocolate chip cookie left out for Santa! They’re sweet, chewy, soft and vegan!
Don’t get me wrong I love a traditional chocolate chip cookie especially Chewy Chocolate chip Cookies!
But to switch things up for Santa a little bit this year I really think these Chocolate Chip Cookie Bars are the perfect homemade sweet treat!
These could not be more simple to whip up, 1 bowl is all that’s required so let’s get started!
Start with the butter in a large mixing bowl, melt it in the microwave.
Next mix the sugar into the butter and then add the rest of the wet ingredients!
Add all the dry ingredients at once and mix until everything is well combined, store the chocolate chips of chunks from a chopped chocolate bar last after the dough is all mixed up.
Once it’s baked make sure you let is cool completely before frosting it otherwise the frosting will melt and then become hard when it cools down!

Santa’s Chocolate Chip Cookie Bars
Ingredients
WET INGREDIENTS:
- ½ cup melted vegan butter I use Earth Balance in the red tub.
- ¼ cup vegan cane sugar
- ¾ cup packed brown sugar
- 1 ½ teaspoon vanilla
- ¼ cup non-dairy milk I use SILK unsweetened almond.
DRY INGREDIENTS:
- 1 ⅔ cup all purpose flour
- Pinch of sea salt
- ¾ teaspoon baking soda
- ½-¾ cup vegan chocolate chips or chunks
- Optional frosting I used Wholesome brand vanilla
- Sprinkles I used a vegan blend from Fancy Sprinkles
Instructions
- Pre-heat the oven to 350˚ F
- Bake 31 minutes
- Spray/butter or line baking dish // 8x8 square pan or round pie dish
- 1. In a large mixing bowl add the butter and melt it in the microwave, then add in the rest of the wet ingredients and mix well.
- 2. Add in all the dry ingredients except the chocolate and mix well, then fold in the chocolate.
- 3. Pour into prepared pan, pressing down evenly using hands, and place in oven, bake for 31 minutes until tooth pick pokes in the center and comes out clean.
