Ingredients

- Vegan Granola: I used homemade vegan granola but if you have a favorite store bought granola that's also fine just watch out for the added refined sugars.
- Pure Maple Syrup: I like to use this to naturally sweeten this apple parfait without the added refined sugars in most yogurts.
- Non-Dairy Yogurt: I used coconut yogurt that was unsweetened but your favorite variety will work just fine. I like to use unsweetened because we are going to naturally sweeten it with maple syrup.
- Apple: Fresh apple that's sweet and crispy. I like honey crisp apples the best but your favorite variety will work just fine.
- Cinnamon: Adds a nice warm flavor and aroma to this apple parfait.
- Coconut Oil: I used this so that the apples do not stick and burn while cooking them.
Variations
- Vegan yogurt: Apple parfaits are absolutely delicious; this parfait is vegan, with dairy free unsweetened coconut yogurt. Feel free to use any type of yogurt you like in this apple yogurt parfait, but remember to keep it unsweetened since we're using maple syrup to sweeten it and keep it refined sugar-free.
- Protein powder: Apple parfaits definitely still taste great if you add 1 scoop of plant-based protein powder, that you mix in with the yogurt. It'll give you additional protein for a single serving.
- Granola or Nuts: This Apple Parfait has my Vegan Granola Recipe used in it, but feel free to grab your favorite granola or try out my tasty recipe if you'd like. Also, feel free to add any chopped nuts like pecans, almonds, walnuts, or any of your favorite nuts on top of this parfait.
- Nut butter: If you like peanut butter, almond butter, or cashew butter, feel free to add your favorite nut butter as a drizzle on top of this vegan Apple Parfait recipe.
How to make this Apple Parfait:
Prep: If making homemade granola be sure to do that ahead of time and have it ready to go.

Step 1: First peel and chop the apple.

Step 2: Place in a pot or pan with the maple syrup, coconut oil and cinnamon and sauté until desired texture.

Step 3: I did about 7 minutes for a slight crisp left, feel free to go for 10-15 minutes if you want them soft.

Step 4: Next mix the yogurt with the maple syrup.

Step 5: Now you can simply start layering (or topping if using a bowl). Start with the yogurt, next the cinnamon apples and top with granola. Repeat until all is used up. (if you make homemade granola you definitely will have leftovers unless you ¼ the batch I linked)

Step 7: Enjoy right away or store components separately in the fridge. Granola can stay on the counter for about 1 week.

Expert Tips
- Caramelizing the apples: An important tip on how to make this Apple Parfait is the time you'll need to caramelize these apples. It takes about 5-8 minutes to mix and stir the apples, cinnamon, and maple syrup. Don't skimp on this step; the caramelized topping is sweet and tastes like apple pie.
- Quick breakfast: If you doubled or tripled this Apple Parfait recipe to save some breakfast parfaits in the fridge, I recommend storing each component separately (except the yogurt and maple syrup mixture can be pre mixed). I would use mason jars with yogurt and maple syrup mixed in the bottom and then when you're ready to eat simply toss the granola and apples in the jar and have you'll have an Apple Parfait to go.
- Toppings: If possible, add toppings right before eating this parfait, such as additional nut butters, maple syrup, fruit and granola. That way, your fresh toppings won't become soggy.
