This is the BEST Caramel Sauce ever! ooey gooey and Super easy to make, only 5 ingredients, naturally sweetened and VEGAN!!!
OMGEEE you guys, this caramel sauce is insane! You would NEVER guess that it’s naturally sweet with dates and maple syrup I think you are going to absolutely love it because it’s so rich and gooey and everything the caramel should be!
The 5 simple ingredients:
Medjool dates, coconut oil, maple syrup, cashew butter and sea salt! Yes that’s it and it could not be any more delicious.
Make sure you pit the medjool dates and measure them!
Make sure you use a really good high speed blender or food processor (I like my mini food processor from ninja, it never lets me down and it just easily blends everything down into a creamy smooth gooey caramel texture, I have had it for yearssss)
The nut butter- I used raw cashew butter but feel free to use whatever nut/seed butter you like best, just make sure there isn’t additional added ingredients and its pure nut/seed butter!
What to love about it:
It’s oh-so- gooey and sticky and kinda like a caramel chew candy (which I bet if you roll it into a log in some parchment paper you could cut them into little candy pieces and wrap them up individually… note to myself I need to try that wink’)
Anyways the texture and the super sweet taste is just incredible and the different ways you can use this caramel sauce is un-beatable! Heat it up in the microwave and drizzle it over ice cream, makes these Chocolate Caramel Cups or these Soft Chocolate Chunk Caramel Cookies.

This is the BEST Caramel Sauce ever! ooey gooey and Super easy to make, only 5 ingredients, naturally sweetened and VEGAN!!!
- Yield: 14 oz. 1x
Ingredients
1 ⅔ cups pitted medjool dates (about 17-20 dates)
2 TBSP soft/melted coconut oil
¾ cup pure maple syrup
½ cup nut butter (I used raw cashew butter)
½ tsp seat salt
Instructions
- Place all ingredients into a high speed blender or food processor (I used my Ninja mini food processor, absolute favorite!) blend until creamy smooth and no lumps!
Notes
if you dates are not gooey and sticky, if they are kind of hard then you need to soak them in warm water for about 30- minutes prior to soften and re-hydrate them.
Store in a jar in the fridge (heat in microwave to soften/melt after being in fridge)
Keep for about 1-2 weeks in the fridge

I just made this - used peanut butter as it was the only nut butter I had in my pantry - and it is soooo good! I made half-quantity (I live alone) and I kind of wish I'd made the full quantity now! I'll be making the Soft Chocolate Chunk Caramel Cookies later. Thank you!
