Ingredients
- 2 cups spinach (packed, about half of a plastic spinach contain/ 2.5 oz.)
- ⅓ cup olive oil
- 1 clove garlic
- 1 tablespoon lemon juice make sure no seeds make it in
- 1 cup walnuts (raw unsalted)
- 1 teaspoon onion powder
- ½ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Place everything in a food processor and blend until smooth.
- Makes about 8 oz. of pesto

Nuts: I like walnuts but you can sub other nuts or seeds such as pine nuts, cashews or sunflower seeds.
