These Gingerbread Cookie Bars are soft and chewy in the center with a crispy chewy crust, vegan and only requires 1 bowl to make!
Call it a cookie, bar, pie it doesn’t matter because they all could describe this perfectly and it’s oh-so-yum and I know you are going to love it!
This would also be a perfect dessert to take along to a gathering with family and friends if you have anything you need to prepare a sweet treat for this coming season!
I’m kind of on a ginger molasses roll this year I mean first some Ginger Molasses Monkey Bread which was super fancy, homemade dough an all with that one!!!
Then these Chewy Ginger Molasses Cookies which is kind of the first version of this recipe, the cookies are a bit more crunchy and these bars right here are more soft and chewy!
Anyways…
Sooo as per usual with most of my desserts you only need 1 bowl for this recipe, you start with the wet ingredients by melting the butter, mixing in the sugars and then the rest of the wet ingredients!
Add the dry ingredients all at once and mix everything up until well combined!
Once baked, let it cool 100 perfect before frosting it otherwise it will warm and melt the frosting and then once it cools it will become hardened.
On that note, you don’t even actually need the frosting, you could drizzle it with chocolate and add the sprinkles before the chocolate hardens so they will stick, you could also add a dusting of powdered sugar or simply leave it plain! Plain is great especially if you're not a frosting in to frosting very much!

Ingredients
WET INGREDIENTS:
- ½ cup vegan butter melted // I use Earth Balance in the red tub
- ¼ cup vegan cane sugar
- ¾ packed brown sugar
- ¼ cup non-dairy milk // I use SILK unsweetened almond
- 2 TBSP molasses
DRY INGREDIENTS:
- 1 ⅔ cups all purpose flour
- Pinch of sea salt
- ¾ tsp baking soda
- 1 tsp ginger // I use powdered spice not fresh grated
- ¼ tsp cinnamon
- Optional frosting // I used Wholesome brand vanilla
- Sprinkles // I used a vegan blend from Fancy Sprinkles
Instructions
Pre-heat the oven to 350˚ F
Spray/butter or line baking dish // 8x8 square pan or round pie dish
1. In a large mixing bowl add the butter and melt it in the microwave, then add in the rest of the wet ingredients and mix well.
2. Add in all the dry ingredients and mix well.
3. Pour into prepared pan and place in oven, bake for 34 minutes until tooth pick pokes in the center and comes out clean.
Notes
Let cool completely before frosting or cutting into it!
Store in a sealed container or covered tightly with plastic wrap for up to 1 week
