Ingredients

- Vegan Granola: I used homemade vegan granola but if you have a favorite store bought granola that's also fine just watch out for the added refined sugars.
- Fresh Blueberries: Used to make the blueberry chia jam or blueberry compote if you prefer.
- Pure Maple Syrup: I used this to naturally sweeten this blueberry parfait without the added refined sugars in most yogurts.
- Non-Dairy Yogurt: I used unsweetened coconut yogurt but your favorite variety will work just fine, be sure it's unsweetened because we are going to naturally sweeten it with maple syrup.
Variations
- Vegan yogurt: In this berry parfait I used non-dairy unsweetened coconut yogurt. Feel free to use any type of yogurt you like in this berry parfait recipe, but keep it unsweetened because we are using maple syrup to sweeten it and keep it refined sugar free.
- Crunch: This blueberry granola parfait tastes great with the added crunch. Use your favorite granola or try my super easy and tasty Vegan Granola Recipe. Feel free to add any chopped nuts that are your favorite to this blueberry parfait recipe.
How to make Blueberry Parfait
Prep: First start by making the blueberry chia jam, if you don't want to make it see notes, it's optional. Also make the vegan homemade granola unless you are using store bough. (both linked in the ingredients above)

Step 1: Next in a small bowl mix the yogurt and maple syrup.

Step 2: Then simply layer the parfait in any order, I did yogurt, blueberry chia jam, granola, fresh blueberries and then repeat again.

Step 3: Store in the fridge up to 2-3 days. The granola will get soft though if you have it preassembled.
