Whoop whoop! Quinoa is one of my favorites at this time of year and this recipe is protein packeddd!
I know a few of you asked for some higher protein recipe so this one is for you all.
Quinoa contains all of the essential amino acids and beans are naturally high in protein so that makes this a delicious, hearty and filling protein packed vegan meal!
I just love hearty filling soups this time of year, especially simple 1 pot ones that are packed with protein (quinoa and beans) and fresh flavors. When it comes to food I really just like to keep things simple-clean-easy and really healthy 90% of the time… yeah when it comes to dessert or sweets I like to just have the indulgent stuff like these Chewy Chocolate Chip Cookies because the low fat things just aren’t really worth even eating if you ask me, I’d rather just skip it lol. Now don’t get me wrong I love a good GF dessert I have plenty of those on the blog but trying to cut out all the sugar and fat… I mean? Me personally I’ll just pass on that.

RECIPE RUNDOWN on this Black Bean Quinoa Soup:
Flavor- clean and earthy with a kick of heat from the chili powder.
Texture- texture galore! Soft potatoes, chewy quinoa, hearty beans I mean this souped just has all the texture sensors going on.
Ease of making- simple chop and drop right into the pot!
Ease of clean up- only 1 pot to clean up!
TIPS for making: keep an eye on it so you don’t forget to add the quinoa towards the end!
Customization: add in some bell peppers or jalapeño for more spice and texture, switch up the type of beans for different flavors, try it with rice or lentils if you’re not a quinoa fan.
Additional notes: I won’t say none because I always gotta add a little something so… I’ll add that this is a really great recipe to make a big batch of and put in a freezer safe container and freeze for up to 1-2 months… just portion them out and when you’re ready to serve you can heat it in the microwave (if it a microwave safe container) or you can let it thaw out in the fridge over night or on the counter for a few hours and re-heat it on the stove top.

Black Bean Quinoa Soup
This homemade Black Bean Quinoa Soup is easy and only requires 1 pot, healthy, packed full of fresh earthy, hearty flavors and texture. Vegan and gluten free.

Ingredients
- 1 can black beans // no salt or low sodium // drain and rinse
- ½ cup chopped onion
- 2 medium yellow potatoes // rinsed and chopped
- ½ tsp each chili powder, onion and garlic powder Salt pepper to taste
- 3 cups low sodium or no salt vegetable broth 2-3 cups water // depending on desired consistency, can always add more later
- ½ cup quinoa // rinsed off
Instructions
- In a large pot add all the ingredients and boil until 75% done (about 24 minutes) potatoes should be slightly firm when you poke them with a fork.
- Add quinoa at this point and reduce to low heat and place a lid on the pot and continue to cook another 15 minutes until quinoa and potatoes are fully cooked.
Notes
Store leftovers in a sealed container in the fridge for 3-4 days or freeze 1-2 months
