- Non-Dairy Milk: I like to use oat milk or almond milk.
- Maple Syrup: This helps to sweeten the overnight oats without adding processed sugar.
- Cashew Butter: Brings a creamy consistency to the chocolate overnight oats.
- Cinnamon: Optional but a great combination with chocolate, balances the flavors.
- Chia Seeds: Added protein, texture and omega 3's.
- Oats: I like Bob's Red Mill gluten free organic oats because they are thick and hearty, but use whatever is your favorite.
- Grated Apple: This gives texture, flavor and sweetness to these overnight oats.
- Walnuts: Texture, healthy fats, and a nice crunch.
- Toppings: I love adding some kind of combination cashew butter, cinnamon, yogurt and extra grated apple.
Variations
- Nut butter: In this overnight oats I used cashew butter, but you can use any nut butter you like, peanut butter, almond butter or sunflower butter for a nut-free version.
- Milk: Use any plant milk you like (plant milk will keep overnight oats vegan), I used unsweetened almond milk but feel free to use soy milk, oat milk, cashew milk or coconut milk, yes each will change the flavor slightly but it will still taste great. I like using homemade or SILK brand.
- Gluten-Free: If you’re looking for gluten-free overnight oats, be sure you get certified gluten free oats to avoid the risk of cross-contamination.
- Add Protein: To boost the protein in this overnight apple pie oats recipe feel free to add your favorite protein powder by adding a ½ to a whole scoop to the mixture with the oats and stir it in, you may need a small amount of extra plant milk.
How to make these Apple Pie Overnight Oats
Step 1: Prep, Grate the apple and set aside and chop the walnuts and set aside.
Step 2: In a mixing bowl add the almond milk, maple syrup and cashew butter and whisk together.
Step 3: Add the rolled oats, chia seeds, grated apple, cinnamon and chopped walnuts and stir everything together.
Step 4: All whisked up! Place in a mason jar, cup or bowl and place in the fridge overnight or at least 3 hours.
Step 5: Added to a bowl, next add the toppings! Serve after it has set for at least 3 hours or overnight. Keeps in the fridge up to 2 days. Add Toppings before enjoying unless you added them already.
Expert Tips
- Storing: You can store before adding any toppers in an airtight container for 2-3 days in the refrigerator.
- Old fashioned oats: Avoid using quick oats for this overnight oatmeal recipe, they cook up too fast and the oatmeal will become mushy.
- Breakfast on the go: Using mason jars to store these overnight oats in the fridge for up to 2-3 days will give you an easy grab and go breakfast.
- Consistency: You can adjust the consistency for this apple pie overnight oats, if you prefer yours to be thick add a little less milk or if you like it runnier add a little more milk either mixed in or right before eating.
- Double or triple: Simply double or triple this recipe and you’ll be able to grab right from your fridge a tasty pre-made breakfast.
- Serving: If your in a hurry soaking these overnight oats at least 2-3 hours is fine or if you like to meal prep they keep well in the fridge for 2-3 days, I like to eat my overnight oats the next morning.
Recipe FAQs
Overnight oats are a no-cook way of making oats. In place of the microwave or stovetop you soak the raw oats with plant based milk overnight allowing the oats to soften by absorbing the liquid.
Generally 6-12 hours (but at least 4 minimum) in the fridge or overnight, the amount of time the ingredients soak affects the taste and texture of the oats.
Generally overnight oats are served cold/chilled. If you wish warm oats you can microwave in a microwave safe container, start with a few seconds at a time and be sure to stir as you warm them up.
Overnight oats can last in the refrigerator for up to 3 days when stored in an airtight container. However, note that the oats will get softer the longer they sit in the refrigerator.
I’d say 1-3 days at the most, in a sealed covered container, by day 3 the oats are very soft. It is said they are still safe to eat at 4-5 days, but by than overnight oats are extremely softened.
Generally overnight oats have been a breakfast meal, but if you double or triple the recipe and store in the fridge in a airtight sealed container it’s been grabbed as a quick easy snack for kids and adults.

Nothing beats the smell of apples/cinnamon and oats wafting out your front door. nothing! As much as I like pie, crust is doing nothing for me these days.
